About James Hughes
James Hughes is the founder of Hughes Hospitality, a Red Seal Chef, Certified Executive Coach and Level 1 Sommelier with more than 30 years in hospitality.
His career includes Regional Chef, General Manager and Vice President of Operations roles, oversight of a 10-restaurant group in Toronto, and more than 20 restaurant openings across Canada and the United States. He has mentored more than 50 chefs toward Red Seal certification.
Now based in Moncton, James works with restaurant owners, hotels, food brands and developers across the Maritimes and on projects further afield. His focus is practical: stronger teams, thoughtful food, sound operating decisions and better guest experiences.
